1. Chili Beans:

You Will Need:

  • 1 Tbsp of olive oil
  • 1 red capsicum chopped
  • 1 onion, finely chopped
  • 500 gm of canned beans
  • 500 gm of canned Mexican Chili Beans
  • 500 gm of canned red kidney beans
  • 500 gm of diced Italian tomatoes
  • 100 gm of light sour cream
  • A bunch of coriander leaves
  • A bunch of salad leaves

How To:

  1. Heat oil in a frying pan and sauté onion and capsicum.
  1. Now add the beans and tomatoes to the pan and stir well.
  1. Reduce the heat and let it
    simmer for five minutes.
  1. Top with sour cream and coriander and serve with salad leaves.

2. Bean Tortilla Sandwich:

You Will Need:

  • 1 ½ cups of pasta sauce
  • 400 gm of canned kidney beans
  • 35 gm sachet of burrito seasoning mix
  • 1 Tbsp of vegetable oil
  • 400 gm of corn kernels
  • 1 cup of grated cheese
  • ½ cup of coriander leaves, chopped
  • 8 tortillas

How To:

  1. Heat the pasta sauce in a saucepan and add beans and corn.
  1. Now stir in the burrito seasoning and let it simmer for two minutes.
  1. In a large frying pan, heat oil and cook the tortillas for 1 minute.
  1. Top the tortillas with cheese and bean and corn mixture. Garnish with coriander leaves and top with another tortilla to make a sandwich.

3. Baked Beans:

You Will Need:

  • 2 Tbsp of olive oil
  • 550 gm of dried cannellini beans
  • 2 onions, finely chopped
  • 1 Tbsp of fresh thyme leaves
  • 3 garlic cloves, crushed
  • 800 gm of diced tomatoes
  • 1-liter chicken stock
  • Salt and Pepper to taste

How To:

  1. Soak the beans in water for eight hours.
  1. Heat oil in a saucepan and sauté onions.
  1. Add thyme and garlic and cook for two minutes.
  1. Now add the tomatoes, chicken stock, and beans. Add a dash of salt and pepper. Bring the mix to a boil
  1. Now transfer the mixture to a baking dish and bake for three hours at 280 degrees F.

4. Bean Wrap:

You Will Need:

  • 1 Tbsp of canola oil
  • 2 Tbsp of cider vinegar
  • 1/4 Tbsp salt
  • 2 Tbsp of finely chopped chipotle chile in adobo sauce
  • 2 cups of shredded red cabbage
  • 1/4 cup of chopped fresh cilantro
  • 1 medium carrot, shredded
  • 1 can of white beans, rinsed
  • 1 ripe avocado
  • 2 Tbsp of minced red onion
  • 1/2 cup shredded Cheddar cheese
  • 4 whole-wheat wraps or tortillas

How To:

  1. Whisk chipotle chile, salt and vinegar in a bowl. Add carrot, cabbage and cilantro. Toss well.
  1. Mash beans and avocado in another bowl. Add onion and cheese.
  1. Toast the tortillas and top with the bean mixture and salad. Roll the tortillas and serve.

5. Sautéed Bean:

You Will Need:

  • 1 onion, sliced
  • 1 Tbsp of extra-virgin olive oil
  • 1 zucchini, sliced
  • 2 cloves garlic, minced
  • 1 squash, sliced
  • 1 Tbsp of oregano
  • 1/4 Tbsp of Pepper
  • 1/4 Tbsp of salt
  • 1 can of great northern beans,
  • 1/3 cup shredded Parmesan cheese
  • 2 tomatoes, chopped
  • 1 Tbsp of red wine vinegar

How To:

  1. Heat oil in a skillet and sauté onion and garlic.
  1. Now add squash, zucchini, salt, pepper, and oregano. Stir well.
  1. Reduce the heat and cook for five minutes.
  1. Now add the beans, vinegar, and tomato. Cook for two minutes on high flame.
  1. Remove the beans from heat and garnish with the Parmesan.

6. Bean Bolognese:

You Will Need:

  • 1 can of beans
  • 1 onion, chopped
  • 2 Tbsp of extra-virgin olive oil
  • 1/2 cup chopped carrot
  • 1/4 cup chopped celery
  • 4 cloves garlic, chopped
  • 1 bay leaf
  • 900 gm of pasta, cooked
  • 1/2 Tbsp salt
  • 1/2 cup of water
  • 1/2 cup freshly grated Parmesan cheese
  • 1/4 cup chopped parsley
  • 1 can of diced tomatoes

How To:

  1. Mash the beans with a fork and leave it aside.
  1. Heat oil in a saucepan. Add onion, celery, carrot, and salt. Cook for ten minutes.
  1. Now add bay leaf and garlic and cook for a minute.
  1. Add water and cook the vegetables.
  1. Now add tomato, parsley, and mashed beans. Cook for five more minutes.
  1. Now mix the pasta and bean sauce. Garnish with parmesan cheese and serve.

7. Green Bean Penne Salad:

You Will Need:

  • 1 1/2 pounds green beans
  • 16 ounces of whole-grain penne pasta
  • 1/2 cup of mayonnaise
  • Tuna – chunks
  • 1/3 pound of Roquefort cheese
  • 2 Tbsp of red wine vinegar
  • 3 Tbsp of parsley
  • 3 Tbsp of finely chopped chives
  • 1/2 Tbsp black pepper
  • Salt to taste

How To:

  1. In separate saucepans, boil the green beans, pasta and tuna until tender.
  1. In a blender, add Roquefort, vinegar, and mayonnaise. Churn to get a smooth consistency.
  1. Toss together green beans, pasta, cheese dressing, parsley and chives in a large bowl.
  1. Season with salt and pepper.

8. White Bean Chocolate Chip Cookies:

You Will Need:

  • ¾ cup of pureed white beans
  • 1 Tbsp of vanilla
  • 1/4 cup of butter
  • 1 cup of brown sugar
  • 1 cup of white sugar
  • 1 ¼ cup of white flour
  • 2 Eggs
  • 1 cup of whole-wheat flour
  • 1 Tbsp of baking soda
  • 2 ½ cup of oat flour
  • 1 Tbsp of baking powder
  • 1 cup of Chocolate Chips

How To:

  1. Mix the pureed beans, white sugar, eggs, brown sugar, butter, and vanilla in a bowl.
  1. Now add all the remaining ingredients and stir well.
  1. Scoop the mixture onto the cookie sheet and bake at 400 degrees F until golden brown.

9. Green Bean Casserole:

You Will Need:

  • 2 cups of White Sauce
  • 1 cup of freshly shredded Cheddar cheese
  • 1 cup of chopped roasted red bell peppers
  • 1/2 cup of panko breadcrumbs
  • 1 cup of blanched green beans
  • 1/2 cup of chopped pecans
  • 1 cup of French fried onions

How To:

  1. Mix white sauce, cheese and pepper in a large bowl. Then add green beans and toss well. Transfer the bean mix to a greased baking dish.
  1. Mix the French onions, panko, and pecans in another bowl. Sprinkle the onion mix over the green bean mixture.
  1. Bake at 350 degrees F until the beans turn golden brown in color.

10. White Bean And Broccoli Nuggets:

You Will Need:

  • 1 cup of chopped broccoli
  • 2 cups of white beans
  • 1 1/2 cup of panko breadcrumbs
  • 1/4 cup of shredded mozzarella cheese
  • 2 eggs
  • 1/4 Tbsp of garlic powder
  • 1/2 Tbsp of Italian seasoning
  • 2 Tbsp of Olive Oil

How To:

  1. Churn all the ingredients in a food processor for a minute.
  1. Make round balls of the mix and flatten it slightly to give the shape of nuggets.
  1. Place the breadcrumbs in a bowl and roll the broccoli nuggets in it.
  1. Place the nuggets on a lined baking sheet and drizzle some cooking oil over it.
  1. Bake until they turn golden.
