1. Easy Kids Chowmein:

You Will Need:

  • 200 g dried noodles – egg or rice
  • 1 large grated carrot
  • 2 thinly sliced spring onions
  • 50 g thinly sliced green beans and peas
  • 2 tsp oil
  • 1 finely chopped garlic clove
  • Some shredded meat, prawns or tofu
  • Water

For The Sauce:

  • 1 tbsp. soy sauce
  • 2 tsp honey
  • 1 tsp tomato ketchup
  • Juice of half a lemon

How To:

  1. Put the noodles in a heatproof bowl. Add boiling water to it. It will take about 5 minutes for the noodles to cook. Once they are ready, drain them and rinse again under cold water.
  1. Mix the soy, honey, lemon juice and ketchup in a bowl.
  1. Heat oil, add the garlic a
    nd stir-fry for a few seconds. Add the carrots, beans, peas and spring onions. Add the meat or any other item you are adding.
  1. Stir fry for about two minutes. Add the sauce and a little water. Add the cooked noodles. Stir it all on high heat for a few minutes and remove from heat.

2. Lunch Box Rice Noodle Salad:

You Will Need:

  • 1 julienned carrot
  • 1 cut up in wedges cucumber
  • A handful of snow peas
  • A handful of mixed sprouts
  • 1 cup cooked and chopped rice noodles
  • 2 tbsp. fish sauce dressing
  • ¼thcup of lime juice
  • 2 tbsp. caster sugar
  • 1 crushed garlic clove

How To:

  1. Mix all the salad ingredients in a large bowl.
  1. Add the dressing once you are about to serve.

3. Chicken Noodle Casserole:

You Will Need:

  • 4 chicken breast filets
  • 375 g egg noodles
  • 300 ml sour cream
  • 420 g condensed cream of mushroom soup
  • 420 g condensed cream of chicken soup
  • 2 cups crumbled butter crackers
  • ½ cup melted butter
  • Water

How To:

  1. Place chicken breasts in a pan and cover with water. Poach them until they cook.
  1. Preheat the oven to 180 degrees C.
  1. Remove the chicken, add the egg noodles and add more water. Let it boil till the noodles are properly cooked.
  1. Dice the chicken breasts once cool. Place them in a baking dish and add the noodles.
  1. Mix the sour cream, chicken soup and mushroom soup in a bowl. Pour it over the chicken and the noodles. Toss everything to coat.
  1. Crush the biscuits. Place them in a bowl and add the melted butter. Sprinkle over the chicken and noodles and bake for about 30 minutes.

4. Noodle Omelet:

You Will Need:

  • ½ tsp peanut oil
  • 2 finely chopped spring onion
  • 2 sliced dried shitake mushrooms – soak them in hot water till soft
  • 2 finely sliced baby corn
  • ¼thcup finely sliced red capsicum
  • 2 tbsp. oyster sauce
  • ½ tsp sesame oil
  • 1 egg and 1 egg white – beaten
  • ½ cup cooked rice noodles or vermicelli
  • 1 tbsp chopped coriander

How To:

  1. Heat peanut oil on medium heat. Add the spring onion, baby corn, mushroom, and capsicum. Stir fry till they turn soft and add oyster sauce.
  1. Remove the vegetables and place aside.
  1. Wipe away the oil from the pan and place on heat again.
  1. Add the sesame oil and eggs. Swirl to make sure they cover the pan. Add the noodles. As the egg starts to set, add the vegetables on one-half of the omelet.
  1. Flip over and cook and then close the omelet. Sprinkle coriander and serve.

5. Chicken Noodle Soup:

You Will Need:

  • 4 cups stock
  • 4 cups water
  • 2 finely sliced white parts of leeks
  • 2 crushed garlic cloves
  • 2 tsp grated ginger
  • 2 bay leaves
  • 2 cloves
  • 400 g finely sliced skinless chicken breast
  • 150 g broken whole grain noodles
  • 50 g sliced spinach leaves

How To:

  1. In a saucepan, add the stock, water, bay leaves, cloves, garlic, ginger, and leeks and let it boil.
  1. Reduce heat and simmer for 10 minutes.
  1. Add the chicken and noodles. Let it simmer and cook for another eight minutes till the noodles are soft.
  1. Add the spinach leaves two minutes before the soup is done.
  1. Remove the bay leaves and add the garlic cloves while serving.
