1. Apricot French Toast:

You Will Need:

  • 50 g butter
  • 6 halved apricots
  • 200 g caramel sauce
  • 350 g pre-made vanilla custard
  • 8 small and thick diagonally cut slices of white bread
  • Water

How To:

  • Heat the butter in a pan and let it melt. Place the apricots in the pan with the cut size facing down. Fry the same for about three minutes. Turn the apricots over and cook for another minute till they turn a light golden color. Add the caramel sauce in the pan and let it m
    elt properly. Add some water if you feel it is too thick and does not cover the apricots properly. Let it stay warm.
  • In a bowl, mix the custard with 4 tbsp. of water. Whip it to loosen it up. Dip the bread slices in the custard mix and make sure it is entirely covered. Melt the remaining butter in the pan. Take out the bread from the custard mix and let any excess custard drip off. Fry them in the butter for about two minutes till they turn golden. Do the same with the remaining bread slices. Serve with the cooked apricots.

2. French Onion Soup:

You Will Need:

  • 900 g Spanish onions cut lengthwise
  • 3 tbsp. extra virgin rapeseed oil
  • 4 thyme sprigs
  • 2 bay leaves
  • 300 ml dry white wine
  • 1 tbsp. plain flour
  • 1 tbsp. Swiss vegetable bouillon
  • Salt to taste
  • Cold water

For Garnish:

  • 1 crushed garlic clove
  • 1 tbsp. extra virgin rapeseed oil
  • 4 long slices from baguette
  • 25 g grated Parmesan
  • 50 g grated Gruyere
  • Black pepper

How To:

  • Heat oil in a pan and stir the onions, thyme and bay leaves. Add some salt to taste. Cook for about 5 minutes on high heat and then cook on low heat for about 35 minutes.
  • In another pan, boil the wine and let it bubble for 30 seconds. Leave aside to cool. Lightly toast the flour in a pan and keep aside.
  • Once the onions turn soft, raise the heat and caramelize, then cook for another 15 minutes. The onions will start sticking to the base of the pan and will turn a dark brown. Add the wine and then add about 1.2 liter of cold water. Add the bouillon and let it boil. Let it simmer for about 15 minutes.
  • Topping – Heat the oven to 200 degree C. Mix the oil with garlic and lightly brush over the bread slices. Cut them into smaller cubes. Place these on a baking sheet and bake for about 10 minutes. Keep aside. Use a baking sheet to line a baking sheet. Take some more thyme leaves and mix with the Parmesan. Spread over the baking sheet and bake for about 8 minutes till it melts. Remove from heat, let it set and break into rough pieces.
  • Remove the herbs from the soup. Place in a bowl, add the croutons, Gruyere, some pepper and Parmesan.

3. Warm Salmon Nioise:

You Will Need:

  • 400 g halved baby potatoes
  • 2 salmon fillets of 140 g each
  • Black olives
  • Chopped sundried tomatoes
  • 1 crushed garlic clove
  • Juice of ½ a lemon
  • 1 tbsp. olive oil
  • 200 g green beans
  • Water

How To:

  • Boil water in steamer. Add potatoes in the water. Place the salmon with the skin side facing down in the steamer pot. Cover and cook till the salmon is cooked. Keep aside. Cook the potatoes till they turn tender. Add the beans, drain them and place in a large bowl.
  • Mix olives and tomatoes with the beans and potatoes. Add chunks of the salmon and discard the skin.
  • Mix the garlic, oil and lemon and add a few drops of water. Pour it over the salad and toss.

4. French Chicken With Bacon And Peas:

You Will Need:

  • 6 rashers chopped smoked bacon
  • 8 skinless and boneless chicken thighs
  • 2 thinly sliced garlic cloves
  • 1 bunch roughly chopped spring onions
  • 300 ml chicken stock
  • 250 g frozen peas
  • 1 roughly shredded Little Gem lettuce
  • 2 tbsp. crème fraiche

How To:

  • Dry fry the bacon on medium heat till the fat gets released and the bacon turns golden. Remove in a bowl and leave the fat in the pan. Add chicken and cook for about 5 minutes till it turns brown.
  • Place the chicken on one side of the pan. Add the garlic and spring onions and cook for 30 seconds. Add the chicken stock and the cooked bacon. Cover and let it simmer for about 15 minutes.
  • Put the heat on high. Add the peas and lettuce and cook for about 4 minutes. Cover and cook till the peas turn tender. Take off the heat once the chicken is cooked. Add the crème fraiche when you are about to serve.
