1. Chicken & Baby Potatoes:

You Will Need:

  • 250 grams of baby potatoes, boiled and peeled
  • 250 grams of boneless chicken, cubed
  • 1 cup of corn
  • ½ cup of onions, sliced
  • ½ Tbsp of red chili flakes
  • ½ Tbsp of oregano
  • Salt and white pepper to taste
  • 1 Tbsp of butter
  • 1 Tbsp of cheese spread
  • 4 Tbsp of milk
  • Oil

How To:

  1. Marinate the chicken pieces in a mi
    x of milk, salt, red chili, oregano and white pepper. Refrigerate for 30 minutes.
  1. Sauté the chicken pieces until tender.
  1. In a wok, melt butter and stir-fry the onions. Then add the remaining red chili flakes and white pepper.
  1. Add the baby potatoes. Cook for a few minutes.
  1. Then add the chicken pieces and corn. Cook for five minutes on slow flame.
  1. Then add the cheese spread and remove from the heat.

2. Potato Green Coins:

You Will Need:

  • 1 small sized potato, parboiled and grated
  • 2 Tbsp of grated cottage cheese
  • 2 Tbsp of grated cheese
  • 1/4 cup of green peas, boiled and coarsely ground
  • 1 Tbsp butter
  • 2 Tbsp of roasted peanuts, finely ground
  • Salt and pepper to taste
  • Oil for cooking

How To:

  1. In a mixing bowl, mix all the ingredients.
  1. Take a spoonful of the mixture and make small sized coins of it.
  1. Shallow fry using a little oil and serve hot.

3. Potato Cheese Balls:

You Will Need:

  • 3 large potatoes, boiled and mashed
  • 1/2 cup of peas
  • 1 spring onion, chopped
  • 1 Tbsp of tomato ketchup
  • Salt and pepper to taste
  • 2 Tbsp of corn flour
  • 1 cup of bread crumbs
  • Mozzarella cheese, cut into small cubes
  • Oil

How To:

  1. In a pan, heat oil and sauté the spring onions for a minute.
  1. Then add salt, pepper, tomato ketchup and mix well.
  1. Then add the potatoes and peas. Cook until the peas turn tender. Remove from heat and leave it aside to cool.
  1. Make small sized balls from the potato and stuff a small piece of cheese in the center.
  1. Mix corn flour with water.
  1. Dip the potato balls into the corn flour mixture and then roll in the breadcrumbs.
  1. Deep fry the balls until they turn golden brown.

4. Jacket Potato Burgers:

You Will Need:

  • 4 medium sized potatoes
  • 500 grams of minced chicken
  • Salt and pepper
  • 4 Tbsp of tomato relish
  • 4 Tbsp of mayonnaise
  • 1 tomato sliced thinly

How To:

  1. Bake the potatoes at 425 degree F until tender.
  1. Mix the minced chicken with salt, pepper, and a potato. Shape it into patties.
  1. Grill the chicken patties for 15 minutes at 350 degree F.
  1. Spread ½ Tbsp of tomato relish over each patty and grill for another minute.
  1. Cut the remaining baked potato in half and spread mayonnaise over it.
  1. Place the tomato slice and burger patty on one-half of the potato. Place the remaining half of the potato on top and serve as a burger.

5. Cheddar Mashed Potato:

You Will Need:

  • 2 pounds of potatoes, boiled and mashed
  • 2 cups of grated cheddar cheese
  • 1 cup of heavy cream
  • ½ cup butter
  • 2 Tbsp of salt
  • 1 Tbsp of black pepper
  • 1 Tbsp of garlic powder
  • 1 jalapeno, finely chopped

How To:

  1. In a bowl, combine cream, butter, and cheddar cheese. Then add salt, pepper, garlic powder and jalapeno.
  1. Finally, add mashed potato and mix well.
