1. Breakfast Quesadilla:

You Will Need:

  • 2 Tortillas
  • 2 egg whites
  • 3 eggs
  • ½ cup salsa sauce
  • 1 tablespoon of cilantro, chopped
  • ½ cup grated cheddar cheese
  • Salt and pepper to taste

How To:

  1. In a bowl, mix egg whites and eggs.
  1. Coat a pan with cooking spray and heat over medium flame.
  1. Pour the egg mixture and scramble until the eggs are done.
  1. Then add salsa, cilantro, and season with salt and pepper. Transfer the scrambled eggs into a bowl.
  1. Place a tortilla in a non-stick pan and sprinkle cheddar cheese on half.
  1. Place the egg mixture over the cheese. Fold the tortillas to form a quesadilla.
  1. Heat for 1 to 2 minutes and then flip over.
  1. Repeat the same process for the other tortilla.

2. Greek Omelet In A Pita:

You Will Need:

  • 1 teaspoon of oil
  • 2 tablespoons chopped onions
  • ¼ cup chopped red bell peppers
  • 2 eggs
  • Salt and pepper
  • 2 tablespoons crumbled feta cheese
  • 2 tablespoons store-bought hummus
  • 1 pita cut into half

How To:

  1. Whisk the eggs with a pinch of salt and pepper. Leave it aside.
  1. In a pan, heat oil and sauté the onions until translucent.
  1. Then add the bell peppers and cook for another 3 minutes.
  1. Add the eggs and quickly stir in all the vegetables. Cook for 5 minutes.
  1. Then turn off the heat and top it with feta cheese.
  1. Spread hummus on each half of the pita.
  1. Fill it up with the scrambled eggs.

You Will Need:

  • Scrambled egg
  • 1 tablespoon of shredded cheese
  • Avocado, diced
  • Tomato, chopped
  • 1 flour tortilla

How To:

  1. Place the scrambled egg, avocado, cheese, tomato on the tortilla and wrap like a burrito.

4. Mini Frittatas:

You Will Need:

  • 2 tablespoons of chopped sun-dried tomatoes
  • ½ cup of boiling water
  • 2 thin slices of prosciutto, chopped
  • ¼ cup of chopped shallots
  • 1 teaspoon of butter
  • 2 garlic cloves, minced
  • ¼ cup all-purpose flour
  • 1 ½ cups fat-free milk
  • 4 egg whites
  • 2 eggs
  • 1 cup of grated mozzarella cheese
  • ¼ cup of shredded Asiago cheese
  • ½ cup of artichoke
  • 2 tablespoons of minced fresh basil
  • ¾ teaspoon of salt
  • ½ teaspoon of white pepper

How To:

  1. Place the tomatoes in a small bowl and then add boiling water to it. Leave it for 5 minutes. Drain and set it aside.
  1. In a skillet, sauté shallots and prosciutto until tender.
  1. Then add garlic and cook for another minute. Remove from the heat and leave it aside.
  1. In a large bowl, whisk flour and milk until smooth. Then add the eggs whites and eggs and whisk again.
  1. Stir in the cheese, basil, salt, pepper, artichokes, tomatoes and the prosciutto mixture.
  1. Coat the muffin tins with cooking spray and fill with the egg mixture. Bake for 30 to 35 minutes.

5. Cherry-Oat Scones:

You Will Need:

  • ½ cup of quick-cooking oats
  • 1 cup of whole-wheat flour
  • 1 cup of all-purpose white flour
  • ¼ cup of brown sugar
  • ¼ teaspoon of salt
  • ½ teaspoon of ground ginger
  • ¼ teaspoon of ground nutmeg
  • 1 tablespoon of baking powder
  • ¾ cup of dried tart cherries
  • 4 tablespoons of unsalted butter cut into small pieces
  • 1 cup of buttermilk

How To:

  1. Place the oats, whole-wheat flour, white flour, brown sugar, salt, ginger, nutmeg, and baking powder in a food processor and blend well.
  1. Then add the cherries, butter, and pulse again.
  1. Make sure you pulse 15 to 20 times so that it forms a sandy texture.
  1. Then stir in the buttermilk and pulse again.
  1. Spoon the mixture on the baking sheet and dab a little cold water over the surface.
  1. Bake for 30 minutes or until the scones turn golden.
