1. Broccoli-Carrot Fritters:

You Will Need:

  • 4 cups of water
  • 2 cups of broccoli florets
  • 1 cup of carrots, julienne
  • ½ cup of all-purpose flour
  • ½ teaspoon of salt
  • 1/8 teaspoon of ground red pepper
  • 2 tablespoons olive oil

How To:

  1. In a small saucepan, add 4 cups of water, broccoli, and the carrots.
  2. Cook for 4 minutes and then drain.
  3. Pat the boiled vegetables with paper towels and chop them finely.
  4. In a bowl, stir in the flour and broccoli-carrot mixture. Add some salt and ground red pepper.
  5. Heat the olive oil in a nonstick pan
    .
  6. Spoon the broccoli-carrot mixture into the pan and flatten slightly.
  7. Cook the fritters for 4 minutes or until they are golden brown.

2. Barbecue Turkey Meatballs:

You Will Need:

  • 1 teaspoon of ground cumin
  • ¼ teaspoon of smoked paprika
  • 2 tablespoons of dark brown sugar
  • 1/8 teaspoon of ground cloves
  • 2 ½ tablespoons of apple cider vinegar
  • 1 large tomato
  • 1 ¼ pounds of ground turkey
  • 3 tablespoons of dried breadcrumbs
  • 1 tablespoon of chili powder
  • Cooking spray

How To:

  1. Add the brown sugar, apple cider vinegar, ground cumin, paprika, cloves, tomato to a mixer and process until smooth.
  2. Combine turkey, chili powder and breadcrumbs in a large bowl. Shape into 16 meatballs.
  3. Heat a large skillet over medium heat.
  4. Sprinkle some cooking spray on the skillet.
  5. Cook the meatballs for 2 minutes.
  6. Turn them over so that they are brown on all sides.
  7. Add the tomato mixture to the pan.
  8. Reduce the heat and simmer for 6 minutes.

3. Chocolate-Peanut Butter Pudding:

You Will Need:

  • 2 ounces of milk chocolate, finely chopped
  • 1 ½ cups of milk
  • ¼ cup of creamy peanut butter
  • 1/3 cup of granulated sugar
  • 2 tablespoons of cocoa powder
  • 2 tablespoons of cornstarch
  • ½ cup of light cream
  • 1 tablespoon of chopped, unsalted, dry-roasted peanuts

How To:

  1. In a medium sized saucepan, combine sugar, cocoa, and cornstarch. Stir with a whisk.
  2. Then add the milk and cream. Boil the milk and cream for a minute or until it’s thin and bubbly.
  3. Remove from the heat and add the chocolate and peanut butter. Stir until smooth.
  4. Spoon the pudding into 6 bowls.
  5. Top each serving with peanuts and refrigerate.

4. Panko-Crusted Fish Sticks:

You Will Need:

  • 1 tablespoon of low-fat milk
  • 2 eggs, lightly beaten
  • 1 pound of halibut filets, cut into 1-inch strips
  • 1 cup of panko
  • 3/8 teaspoon of kosher salt
  • 3/8 teaspoon of freshly ground black pepper,
  • 2 tablespoons of canola oil,
  • ¼ cup of light sour cream
  • 3 tablespoons of canola mayonnaise
  • 2 tablespoons of finely chopped bread-and-butter pickles
  • 2 teaspoons minced capers

How To:

  1. In a large bowl, combine milk and eggs and stir with a whisk.
  2. Then add the halibut and toss it over to coat it evenly.
  3. In a zip-lock bag, add the panko, a ¼ teaspoon of salt and a ¼ teaspoon of pepper.
  4. Add the fish strips to the panko mixture and shake the bag to combine.
  5. Heat 1 teaspoon oil in a non-stick skillet.
  6. Add half of the halibut, cook for 4 minutes or until done. Make sure all the sides are brown.
  7. Repeat the procedure with one tablespoon oil and remaining fish.
  8. In a small bowl, combine mayonnaise, pickles, capers, sour cream and 1/8 teaspoon of pepper.
  9. Serve the sauce with the halibut.

5. Chicken Yakitori:

You Will Need:

  • ¼ cup of soy sauce
  • 3 tablespoons of sugar
  • 1 tablespoon of rice vinegar
  • 2 tablespoons of chicken broth
  • 3 teaspoons of peanut oil
  • 1 pound of boneless chicken thighs
  • 8 ounces snow peas, diagonally cut
  • A bunch of green onions, cut into 1-inch pieces

How To:

  1. In a small saucepan, combine soy sauce with sugar, chicken broth, and rice vinegar.
  2. Reduce the heat and simmer for 3 minutes. Remove from the heat and leave it aside.
  3. Heat oil in a skillet over medium heat.
  4. Add chicken thighs and cook for 3 minutes or until they are light brown.
  5. Transfer the chicken to a bowl and cut into 1-inch strips.
  6. In another pan, heat one teaspoon oil and add onion and snow peas. Sauté for 2 minutes.
  7. Add the soy sauce mixture and chicken and cook for 2 minutes.
  8. Cook for another minute, while frequently stirring.
