You Will Need:

  • 1 medium onion, chopped
  • 4 cloves of garlic, crushed
  • 2 green chilies, sliced
  • 2 tsp. of coriander powder
  • 2 tsp. of cumin seeds
  • 2 tsp. of mustard seeds
  • 1 tsp. of ground ginger
  • 1 bowl of cherry tomatoes, sliced
  • 800g of baked beans

How To:

  • In a saucepan, add two teaspoons oil and sauteonion, garlic, herbs, spices and chilies until soft.
  • Then add the tomatoes and stir for 2 minutes.
  • Add the baked beans and cook for another 5 minutes.
  • Season with salt and serve with rice or mashed potato.

2. Easy Quiche:

You Will Need:

  • 1 pack puff pastry (or short crust)
  • 4 eggs
  • 150ml milk
  • 75g feta (optional), crumbled
  • 100g spinach wilted

How To:

  • Preheat the oven to 190 degrees.
  • Line an ovenproof dish with puff pastry. Leave some pastry hanging to prevent the shrinkage.
  • Wilt the spinach in a leave it aside to cool. Once it has cooled, squeeze out the excess liquid.
  • In a measuring bowl, whisk 4 eggs and add milk to it.
  • Season the egg mixture and add spinach to it.
  • Then pour the mixture into the pastry-lined dish.
  • Sprinkle the crumbled feta cheese and bake for 25 minutes.
  • Let the quiche cool before serving to the kids.

3. BBQ Vegetable Kebab:

You Will Need:

  • A selection of vegetables of your choice, preferably cherry tomatoes, mushrooms, peppers and red onion
  • 1 tbs. balsamic vinegar
  • 3 tbsp. olive oil

How To:

  • Cut the vegetables into cubes and add thread on the skewers.
  • Mix vinegar with olive oil and season lightly.
  • Then brush the dressing over the vegetables and barbecue the skewers for 10 to 15 minutes or until the vegetables are soft and brown.
  • Serve the vegetable kebabs with potato wedges.

4. Risotto:

You Will Need:

  • 1 tbsp. olive oil
  • 1 onion, finely chopped
  • 300g risotto rice
  • 900ml chicken stock or vegetable stock

How To:

  • Heat some oil in a saucepan and sauté the chopped onions over medium heat.
  • Then add rice to it and stir well. Cook the rice for 2 minutes.
  • Add a quarter of the stock and let it simmer.
  • Repeat the process until the stock is used and the rice in creamy and tender.
  • If you run out of stock, then you can add a little bit hot water to it.

5. Broccoli Cheese:

You Will Need:

  • 1 cup of chopped broccoli
  • 1 cup diced onion
  • 1/2 cup chopped button mushrooms
  • 450ml of milk
  • 1/2 cup of grated cheddar cheese
  • 1 tbsp. of plain flour
  • 1 tbsp. of margarine
  • 1 clove of garlic (1 clove)
  • 1/2 teaspoon black pepper

How To:

  • Steam the broccoli and put it aside.
  • In a saucepan, saute the onions and add the chopped garlic and mushrooms. Cook until the onions are translucent and mushrooms are tender.
  • Take a pan and melt the butter. Then add flour to it.
  • Add milk and whisk well, so that it does not form lumps.
  • When it turns thick, stir in the cheddar cheese and black pepper.
  • Then add fried mushrooms, onion, garlic to the sauce and stir for 2 minutes.
  • Pour the sauce over the steamed broccoli and sprinkle remaining cheddar cheese over it.
  • Bake for 20 minutes or until the cheese is golden brown in color.
