1. Baked Chicken Pasta:

You Will Need:

  • 500g of chicken breast
  • 200g of cooked penne pasta
  • 250g of butternut pumpkin, peeled and cut into cubes
  • 150g of peas
  • 70g of broccoli florets
  • 300ml of tomato pasta sauce
  • 40g of grated cheddar cheese

How To:

  • Grill the chicken for 7 minutes on each side. Leave it aside to cool.
  • When the chicken has cooled, chop the chicken coarsely.
  • In a saucepan, cook pump
    kin for 10 minutes. Then add broccoli and peas and cook for another 2 minutes.
  • Preheat the oven to 180 degrees for 3 minutes.
  • Combine pasta, chicken, and the pumpkin for the mixture and divide the mixture among into 4 ovenproof dishes. Sprinkle cheddar cheese over it and bake until the cheese melts.

You Will Need:

  • 1 egg, lightly whisked
  • 45g cornflake crumbs
  • 200g chicken breast fillet cut into 3cm pieces
  • Olive oil spray
  • Sweet chili sauce, to serve

How To:

  • Preheat the oven to 200 C and line 2 oven trays with baking paper.
  • Place the cornflake crumbs and egg in separate bowls. Dip the chicken pieces first into the egg and then into the cornflakes crumbs.
  • Place the chicken pieces on the oven tray.
  • Lightly spray some olive oil over the chicken and bake for 10 to 15 minutes or until the nuggets are cooked.
  • Serve with sweet chili sauce.

3. Chicken Satay:

You Will Need:

For The Marinade:

  • 1 clove of garlic, crushed
  • 1 ½ tbsp. of lemon juice
  • 1 tbsp. of soy sauce
  • 1 tbsp. of honey
  • 1 tsp. of peanut butter
  • 4 chicken breasts, cut into strips

Sauce:

  • 1 tbsp. vegetable oil
  • ½ onion, finely chopped
  • 1 tbsp. sweet chili sauce
  • 100g peanut butter
  • 75m coconut milk
  • 75ml water
  • 1 tsp. soft brown sugar
  • 8 wooden or bamboo skewers

How To:

  • In a bowl, combine the marinade ingredients and leave for 1 minute.
  • Flatten the chicken strips with a rolling pin and marinate for about 30 minutes.
  • Before using the skewers, soak it in cold water for 20 minutes. It will prevent the skewers from burning.
  • To make the sauce, heat the oil and sauté chilies and onion for 4 minutes. Then stir in the add the rest of the ingredients required for the sauce.
  • Keep stirring it continuously so that it thickens.
  • Preheat the grills for 3 minutes.
  • Thread the chicken strips on the skewers and grill for 5 minutes.
  • Serve the Chicken Satay with peanut sauce.

4. Grilled Chicken Quesadillas:

You Will Need:

  • 2 tablespoons of olive oil
  • 2 teaspoons dried of marjoram
  • 1 teaspoon of salt
  • 1 teaspoon of pepper
  • 750 grams of boneless chicken breasts
  • 12 6-inches of tortillas
  • Cilantro and pecan Pesto
  • 14 ounces of shredded Mexican four-cheese blend

How To:

  • Combine the olive oil, marjoram, salt, pepper and chicken in a bowl and chill for 2 hours.
  • Then, remove the chicken from the marinade and grill over medium heat for 5 minutes or until both the sides are done.
  • Place cheese, chicken and cilantro and pecan Pesto on the tortilla and cover with the other tortilla. Do the same with the rest of the tortillas.
  • Cook the quesadillas over medium heat for 3 minutes or until it’s they are lightly brown in color.
  • Cut the quesadillas into quarters and serve.

5. Grilled Chicken ‘N’ Cheese Sandwich:

You Will Need:

  • 2 cups chopped cooked chicken
  • 1/3 cup golden raisins
  • 1/4 cup slivered almonds, toasted
  • 1/4 cup diced celery
  • 1/2 cup mayonnaise
  • 12 Monterey Jack cheese slices
  • 12 whole wheat bread slices

How To:

  • In a bowl, combine chicken, raisin, almonds, celery and mayonnaise.
  • Place a cheese slice on the bread slice and spread the mixture evenly. Top with another bread and cheese slice. Repeat the same procedure with other bread slices.
  • Grill the sandwich in a griller for 3 minutes or until lightly browned. Serve with tomato ketchup.
