You Will Need:

  • 20 small cocktail skewers
  • 20 strawberries
  • 1 cup castor sugar
  • ½ cup water

How To:

  • Insert 1 skewer into each strawberry.
  • Then place the strawberries on a
    heatproof tray lined with baking paper. Make sure you place the strawberries in a single layer.
  • Combine castor sugar and water in a saucepan and cook for 3 minutes, until the sugar dissolves.
  • Then increase the heat and boil without stirring, or until the mixture turns golden. Leave it aside for 1 minute for the bubbles to subside.
  • Dip the strawberries into the hot toffee and place on the tray.
  • Let the strawberries stand at room temperature for 15 minutes or until the toffee is cooled.

2. Chocolate Pops:

You Will Need:

  • 700g frozen chocolate butter cake, thawed and cut into cubes
  • 100g butter
  • 1 cup sweetened condensed milk
  • 100g brown sugar
  • 16 white marshmallows
  • 65g desiccated coconut
  • 80g chocolate sprinkles

How To:

  • Process the chocolate cake in a food processor to make fine crumbs.
  • In a medium saucepan, combine the butter, condensed milk, and brown sugar. Cook for 10 minutes or until the butter melts. Remove from the heat and set it aside for 10 minutes.
  • Add the cake crumbs to the butter mixture and stir well.
  • Then roll 1 tablespoon of the cake crumb mixture around each mixture to form a ball.
  • On a large plate, combine coconut and chocolate sprinkles. Roll each chocolate ball in the coconut mixture and place on a tray lined with non-stick paper.

3. Lemon Jelly:

You Will Need:

  • Juice of 8-10 lemons
  • 1 teaspoon of finely grated rind
  • 130g castor sugar
  • 400ml lemonade
  • 6 gold-strength gelatin leaves

How To:

  • In a saucepan, boil rind, juice, sugar and lemonade over medium heat. Keep stirring so that the sugar dissolves completely.
  • Reduce the heat and cook for another 2 to 3 minutes.
  • Meanwhile, soak gelatin in cold water for 5 to 10 minutes.
  • Squeeze out the excess water and add to the lemon mixture.
  • When the mixture has cooled, strain and pour into 250 ml molds and refrigerate overnight to set.

4. Mini Carrot Cakes:

For The Cake:

  • 225g flour
  • 1 teaspoon of mixed spice
  • 1 teaspoon of bicarbonate of soda
  • 65g sultanas
  • 70g brown sugar
  • 1 cup grated carrot
  • 80ml light olive oil
  • 2 eggs, lightly whisked
  • 200g low-fat honey yogurt

For The Frosting:

  • 180g cream cheese
  • 45g icing sugar mixture
  • 1 teaspoon finely grated orange rind
  • 5 teaspoons fresh orange juice

How To:

  • Line twelve 80 ml muffin molds with paper cases.
  • Sift the flour, soda and mixed spice in a bowl.
  • Then stir in the sultanas, sugar, and carrot.
  • In a jug, whisk oil, egg, and yogurt together.
  • Pour into the flour mixture and stir well to combine.
  • Spoon the mixture into the cases and bake for 15 minutes.
  • To make the frosting, beat the cream cheese and icing sugar in a bowl until it becomes smooth. Add orange rind and juice and stir to combine.
  • Spread the frosting over the cake and serve.
