  • Softened butter
  • Caster sugar

  • Self-raising flour

For Icing:

  • Butter
  • Icing sugar – sieved
  • Seedless raspberry jam
  • Red and pink sprinkles

How To:

  • Preheat oven to 180 degree C.
  • Mix butter and caster sugar. Slowly add in the beaten eggs. Add the self-raising flour and mix well. Make sure you stir properly to avoid any lumps.
  • Pour the mix in the cupcake case.

How To:

  • Preheat oven to 180 degree C. Use paper cases to line the muffin tray.
  • Mix the butter, eggs and sugar and keep whisking till it turns fluffy.
  • Sieve the flours and add to the egg mix. Add the coconut, raspberries and sour cream and mix. Put the mix in the muffin tray and smoothen the tops using a spoon.
  • Bake for about 25 minutes till it is completely set. Leave aside to cool.
  • In a bowl, mix the softened butter, cream cheese and coconut milk. Keep mixing and finally add the icing sugar. Mix well to combine all ingredients together.
  • Place the cream cheese icing on the cupcakes and spread till the edges. Place some raspberries on top if you wish and sprinkle with the desiccated coconut. This is an easy cupcake recipe for kids.
